Vegetarians and Vegans face a challenge when they plan an event that requires catering!
So few caterers really understand that vegetarian cooking means flavorful and creative menus - not a lack of meat.
At Catering by Dinner is Served we understand balancing proteins, and complex carbohydrates. We know what vegans eat and we don't think it's a limitation. We love to develop creative menus that highlight just what you like to eat!
Many world cuisines lend themselves well to the palates of vegetarians and vegans. Here's just a small sample of the kinds of menus we can provide for your next party, or to help you celebrate your wedding day.

Mediterranean Inspired Menu

Appetizers

Stuffed Grape Leaves, White Bean Dip, Spinach and Tofu Borekas

Entrees
|
Casserola Della Nonna: A "grand production suitable for a generous feast or special occasion." Includes eggplants, potatoes, zucchini and two kinds of cheese - mozzarella and parmesan, all layered in a lasagna fashion.
Moroccan Stew: An elegant stew with artichokes hearts, ripe olives and saffron. (vegan)
Mushroom-Leek Frittata: Leeks and mushrooms are great complimentary flavors. A Frittata is similar to a quiche without the crust.
Veggie Moussaka: This is a great combination of tomato and custard sauces, featuring eggplant and zucchini. We can also add tofu to enhance the protein level.

Miso Soup Bar: with add-in, like shiitake mushrooms, assorted veggies and tofu.
Tofu Sate: Featuring peanut sauce over baked tofu seasoned with Chinese 5 spices.
Udon Noodles with Vegetables: Warm and robust with a blend of Chinese and Southeast Asian seasonings. Tofu or tempeh can be added for additional protein.
Vegetable Pot Pie: Fusion tastes with traditional pot pie crust, and surprising Asian seasonings

Chili poppers (peppers filled with cream cheese), chips and salsa, cheese platter, including goat cheese with Tex-Mex spices.

Rice and beans with corn, chips, salsa, and guacamole.

Black Bean Sweet Potato Burritos: Filled with vivid colors and tastes. Served with Mango or Citrus Salsa. (vegan)
Chilaquile Casserole: this casserole features refried beans, cheddar cheese, corn and green peppers.
Chili Blanco: Chili with white beans, soy "ground round," served with blue corn chips (vegan)
Corn and Cheese Pudding: Creamy and satisfying featuring carrots, peppers, corn and sharp cheddar cheese.
Crema Andaluz: A creamy Mexican potato soup made zesty with tomatoes and cayenne. (can be made vegan by using Soy Milk).
Pepper Cheese Enchiladas: A richly flavored dish featuring three colors of peppers.
Sweet Pepper and Cheddar Strata with Avocado Salsa: Contrasts creamy topping with savory Mexican-spiced peppers.
Tofu Burritos: Tex-Mex taste, low fat. (vegan)
Veggie Pot Pie: fusion tastes with traditional pot pie crust, and Mexican spices.
